Winemaker Notes
A total of 24 tons of Riesling was handpicked between Oct 24th and 29th from our 5-acre Riesling block containing clones 21b and 49. We soaked the skins in the juice for 6 hours prior to gentle pressing the grapes. A slow and cool ferment at 14c in stainless steel tanks preserved the crisp acidity and fresh fruity character of the grapes. Half of the volume was fermented to dryness, while the other half remained semi-sweet with 35 grams of residual sugar. Blended together, this slightly off-dry Riesling has a touch of residual sugar and bright acidity which allows the wine to age very well.
Food Pairing Notes
This Riesling will pair well with a mild chicken curry (based on Thai or Indian recipe), Munster cheese or other red rind cheeses.

Wine is approaching its peak, but can be cellared until 2020-2022
