Winemaker Notes
A portion of the Cabernet Franc grapes were vinified in a passimento style. These grapes were air dried over a period of six weeks, leaving the winemaker highly concentrated, partially raisinated, Cabernet Franc berries. These berries were then fermented in open top French oak barrels over the period of a month. Then the wine was aged for 10 months in French and American oak barrels.
Food Pairing Notes

We're not connoisseurs! We just opened this wine, used it cooking a roast, and then paired it with dinner. Outstanding!
